Ingrédients
2 tablespoons extra-virgin olive oil, plus extra to grease pan
4 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 tablespoon fresh oregano leaves
1 (28-ounce) can whole peeled tomatoes, drained and hand crushed (recommended: San Marzano)
Kosher salt and freshly ground black pepper
1 recipe fresh pizza dough, recipe follows
1 (8-ounce) ball fresh buffalo mozzarella, water drained
1/2 bunch fresh basil leaves
Remove from the oven, cut into slices and serve.
Fresh Pizza Dough:
2 packages active dry yeast
2 teaspoons sugar
2 cups warm water (100 to 110 degrees F.)
2 tablespoons kosher salt
6 cups unbleached all-purpose flour, plus more for dusting
2 tablespoons extra-virgin olive oil, plus extra for bowl

Preheat oven to 450 degrees F. Place a roll pan or baking sheet pan on the middle oven.
Start by making the tomato sauce . In a large skillet over medium heat, add 2 tablespoons of olive oil , minced garlic , thyme and oregano. Cook until fragrant , then add all the chopped tomatoes and season with salt and pepper to taste. Reduce heat and simmer for 7-8 minutes to reduce and concentrate the flavor . Turn off the heat and reserve Cook .
Remove the pan jelly roll preheated oven and drizzle olive oil over the entire surface . Cut the dough into 2 pieces and 1 unit of reserve for another use. Roll out the pizza Cook dough that is just larger than the pan, then placed into the mold , so that the dough rises the sides to form a crust on the rim. Smear with tomato sauce , mozzarella and tear and spread evenly over top of pie . Tear the basil leaves , spread on top and drizzle with a little oil . Fresh Pizza pizza Dough :
In a small bowl , mix the yeast, sugar and water and stir gently to dissolve . Let the mixture stand until the yeast comes alive and starts to foam , 5 to 10 minutes.
If using a mixer , mix the salt and flour in the bowl and pulse a few times to mix ( Cook ). Add the yeast mixture , the lowest speed until the integrity of the flour. When the dough starts to come together , increase speed to medium and mix until the dough comes together into a ball. This should take about 2 minutes pizza . Add the olive oil and pulse a few more times . Stop the machine periodically to scrape the dough hook . Get a feel for the dough you do it by squeezing a small amount together between thumb and fingers ( pizza ) . If it is crumbly , add more water if sticky , add more flour, 1 tablespoon at a time . Place dough on a lightly floured surface and fold it over itself several times , knead until smooth and elastic.
If you make the dough by hand , add the yeast mixture in a large bowl and add salt and 2 tablespoons of olive oil pizza . Then start stirring in the flour pizza . When the mixture becomes too stiff to stir with a spoon, knead the remaining flour by hand , adding just enough so that the dough is soft but not too sticky . When you work pizza , squeeze a small amount of dough together between thumb and fingers. If it is crumbly , add more water if sticky , add more flour, 1 tablespoon at a time . Knead until smooth and elastic about 10 minutes.
Shape dough into pizza a round and place in a lightly greased bowl , turning to completely pizza coat the dough with oil. Cover with plastic wrap or a damp towel and let rise in a warm place (such as a gas burner .. ( pizza ) ) until doubled in volume , about 1 hour !! pizza
