Lemon Poppy Seed Muffins I

    Ingrédients

    2 cups all-purpose flour
    3/4 cup white sugar
    A quarter cup of poppy seeds
    2 teaspoons baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 eggs
    1 cup lemon yogurt
    Vegetable oil 1 /4 cup
    1 tablespoon lemon zest
    1/3 cup lemon juice
    3 tablespoons white sugar


    Directions

    Preheat oven to 400 degrees F ( 205 degrees C). Lightly grease a muffin pan .

     

    Combine flour , white sugar 3/4 cup poppy seeds, baking powder , baking soda and salt.

    In another bowl combine eggs , yogurt , vegetable oil and lemon zest . Mix well and pour over the flour mixture . Mix until just combined . Do not overmix !

    Pour the mixture evenly between the prepared pans . Bake at 400 degrees F ( 205 degrees C ) for 20 minutes.

     

    Mix the lemon Poppy juice with remaining 3 tablespoons white sugar. Stir the sugar dissolves.

    Once the muffins are cooked pierce the top several times with a toothpick. Slowly pour about 1 tablespoon of the mixture of lemon Poppy juice and sugar on top of each cupcake. Let muffins cool in the pan for 10 minutes before removing from tin.
