Mary Berry Frozen elderflower posset

    Ingredients 

    150ml / ¼ pint of cream double payment 
    150ml / ¼ pint of elderberry flower cordial 
    Summer berries, to serve 
    a dusting of icing sugar 



    Method of Preparation

    Place the cream in a bowl and beat the mixture until soft peaks form, then gradually pour in the elderberry flower cordial, beating until smooth.

    Freeze in a plastic container until completely frozen. Scoop into a food processor and blend to remove ice crystals

    Transfer to very small dessert cups or martini glasses for at least three hours or overnight in the freezer.

    To serve, place in the refrigerator for 15 to 20 minutes to soften slightly, then serve each glass with some summer berries and garnish with a dusting of icing sugar.
