Mary Berry Roast fillet of beef with roasted garlic and mustard cream

    Ingrédients

    To beef

    Average thickness 1kg/2.2lb steak - cut of meat
    salt and pepper
    2 tablespoons olive oil
    For the sauce
    2 heads garlic whole
    150ml / ¼ pint of mayonnaise
    150ml / ¼ pint of full cream fresh grease
    ½ teaspoon sugar
    2 tablespoons mustard seeds

    Preheat the oven to 220C/425F/Gas 7 ( 200C fan).

    Rub the fillet roasted with beef fillet with lots of salt and pepper and oil.
    Heat a large skillet until very hot. Saute the network on all sides until golden brown . Transfer to a baking dish .

    Place the steak in the center of the pan , place the whole garlic heads around the net and drizzle with a little oil . Bake for 23 minutes for medium rare ( only 20 minutes if it is a long thin piece ).
    When the meat is cooked , remove from oven, cover with foil and let rest for 15 minutes.

    Hot or you can let it cool, then wrap in a sheet and place in the refrigerator to cool completely to serve. Chef Mary Berry

    To make the sauce , chop the fillet ( Recipes Mary Berry : Roast fillet of beef with roasted garlic and mustard cream . ) roasted garlic heads in half horizontally and squeeze each clove garlic paste alone in a bowl . Add mayonnaise , sour cream and sugar.
    Mix to a smooth paste using a blender or food processor. Incorporate whole grain mustard . Refrigerate until ready to serve fillet roasted with beef. Chef Mary Berry
