Bird's Nest Breakfast Cups

    Ingredients

    1 grated potato ( 30 ounces ) frozen hash brown earth, thawed
    2 1/ 2 teaspoons salt
    1 teaspoon black pepper
    2 1/ 2 tablespoons olive oil
    2/3 cup Cheddar cheese
    12 eggs
    2 tablespoons water
    8 slices cooked bacon , crumbled - divided
    1/4 cup shredded Cheddar cheese, divided



    Directions


    Preheat oven to 425 degrees F ( 220 degrees C). Grease 24 muffin cups .

    Mix hash browns , salt, black pepper , olive oil , and 2/ 3 cup shredded Cheddar cheese in a bowl. Divide the mixture between the prepared muffin pan and use your fingers to shape potato mixture into Breakfast nests Cups with hole in the middle ; Resultat : Bird's Nest Breakfast Cups .

    Bake in preheated oven until potatoes are golden brown on the edges golden and cheese is melted , 15 to 18 minutes . Remove hash brown Breakfast nests Cups .

    Reduce oven temperature to 350 degrees F ( 175 degrees C).
    Beat eggs and water in a bowl until well blended ; season with salt and black pepper. Pour the same amount of the mixture of eggs in each Breakfast nest Cups ; sprinkle with crumbled bacon and 1 teaspoon of cheddar cheese. Resultat : Bird's Nest Breakfast Cups .

    Bake until the eggs are set , 13 to 16 minutes. Let cool in pan and slide a knife between the crust of potatoes and bread cup ; Resultat : Bird's Nest Breakfast Cups .
